Why use ozone to clean seafood

Ozone is a strong oxidant that can kill bacteria, remove pesticide hormones, and remove odors without causing secondary pollution. Ozone self-decomposes to generate oxygen, and does not form harmful substances to remain in seafood.
Other applications of ozone water in seafood
Most of the seafood we consume is harvested in the ocean by large fishing boats that may stay at sea for weeks at a time. In order to keep high-quality fish products on the market, ozonized ice is often used on these vessels to store fish harvested and stored during the initial voyage. Ozone ice making has become popular in many onshore operations and seafood storage in fish farms. Ozone can be dissolved in water and then frozen in ice making. This process essentially stores ozone in ice and forms ice, often called ozonation. This ozonated ice can be used for fish storage to extend shelf life and provide fresher, better looking products to end users.
